Low Calorie Chicken Salad

If you like chicken salad but not all the calories that come a long with it, you’re going to like this recipe. This is actually a recipe I stole from my boss during a party we had at work. The first thing you want to do is dice up 3 pieces of cooked chicken breasts. You’re not going to want to season them as it might interfere with the flavors of the other ingredients.

The next thing you’re going to want to add is 16 tbsp of cool whip. The cool whip is a creamy alternative to using mayonnaise, which is high in grams of fat. At this point you’re going to want to make sure the chicken is smothered in the cool whip and you’re going to mix it all together.  Next you’re going to add 1 cup of diced grapes and 1 cup of diced celery. Just mix it all together and voila! Your chicken salad is ready. All that’s left to do is chill it in the freezer for a couple of hours and you’re good to go. This is a good recipe for all types of occasions such as baby showers, wedding showers and work parties while trying to lay low on the calories.

Pick-Me-Up Juice Recipe

Since my kitchen has been under construction the past few days, eating out has been my only option. Fortunately, I’ve still been able to use my juicer! Since I’ve been sick the past couple of days and haven’t had much energy, I decided to make a juice today that was enriched with a lot of vitamin C. Here is the recipe in case you are in a need of a little pick-me-up:

  • ·      1 red bell pepper (bell peppers are high in vitamin C)
  • ·      1 red apple
  • ·      1 pear
  • ·      1 lime
  • ·      Half an inch of ginger


Directions:

  1. Wash all your ingredients. 
  2. Peeling your fruit is optional. I personally always peel the lime since it leaves me with a bitter aftertaste, but that's just me.
  3. Add them to your juicer and enjoy!

Coffee First


After this past week being one serious emotional downward spiral, cooking in the kitchen was a therapeutic outlet for me. On my last post, I had talked about the certain foods my mom had to stay away from after being diagnosed with vestibular migraines. Though I don’t follow it as closely as she does, not eating processed foods makes one heck of a difference! I used to add Splenda every day to my coffee, and since this diet change I have used nothing but pure organic sugar cane. I feel like this alone has made a difference in the way my body feels. While I’m on the topic of coffee, I have to say I’ve never been much of a breakfast person.  The large dose of caffeine I intake in the mornings curbs my hunger until 1 p.m. for lunchtime. This has a very negative impact on your body’s metabolism. And also sends me on a serious light-headed coffee buzz until I eat my first meal.  So the past couple of mornings I have been making breakfast in effort to speed up my metabolism throughout the day and feel better in the mornings. When I’m in a hurry, I’ll heat up some low sugar oatmeal and drizzle it with honey and chia seeds. But mornings like today when I have time, I made a mouthwatering omelet that any spicy food lover would enjoy. The first thing I did was whisked two eggs in a bowl with onion powder, garlic powder and a hint of orange adobe seasoning for a little tangy kick. After heating my pan with olive oil, I poured what I whisked up and let it sit in the pan until it fried for a little bit. Once it solidified, I added chopped onions, minced garlic, tomatoes and spinach on the egg. Keep in mind it’s important to cook at a low heat since egg cook quickly and you don’t want to burn your concoction. After letting the veggies cook on the egg for about a minute you then want to flip one side of the egg over to the other side, making into a taco, essentially. What I do is press down on the side that’s up for about 20 seconds and then flip the entire thing over and press down again with a spatula for an additional 20 seconds. Once the eggs is golden brown on the edges, that’s when you know it’s time to dig in. And to top it off, I drizzle some Sriracha sauce. And Mmm Mmm, talk about a burst of flavor. And the best part about it is that it’s healthy! I’m hoping to come up with more creative ways of eating a healthier breakfast.
