Coffee First


After this past week being one serious emotional downward spiral, cooking in the kitchen was a therapeutic outlet for me. On my last post, I had talked about the certain foods my mom had to stay away from after being diagnosed with vestibular migraines. Though I don’t follow it as closely as she does, not eating processed foods makes one heck of a difference! I used to add Splenda every day to my coffee, and since this diet change I have used nothing but pure organic sugar cane. I feel like this alone has made a difference in the way my body feels. While I’m on the topic of coffee, I have to say I’ve never been much of a breakfast person.  The large dose of caffeine I intake in the mornings curbs my hunger until 1 p.m. for lunchtime. This has a very negative impact on your body’s metabolism. And also sends me on a serious light-headed coffee buzz until I eat my first meal.  So the past couple of mornings I have been making breakfast in effort to speed up my metabolism throughout the day and feel better in the mornings. When I’m in a hurry, I’ll heat up some low sugar oatmeal and drizzle it with honey and chia seeds. But mornings like today when I have time, I made a mouthwatering omelet that any spicy food lover would enjoy. The first thing I did was whisked two eggs in a bowl with onion powder, garlic powder and a hint of orange adobe seasoning for a little tangy kick. After heating my pan with olive oil, I poured what I whisked up and let it sit in the pan until it fried for a little bit. Once it solidified, I added chopped onions, minced garlic, tomatoes and spinach on the egg. Keep in mind it’s important to cook at a low heat since egg cook quickly and you don’t want to burn your concoction. After letting the veggies cook on the egg for about a minute you then want to flip one side of the egg over to the other side, making into a taco, essentially. What I do is press down on the side that’s up for about 20 seconds and then flip the entire thing over and press down again with a spatula for an additional 20 seconds. Once the eggs is golden brown on the edges, that’s when you know it’s time to dig in. And to top it off, I drizzle some Sriracha sauce. And Mmm Mmm, talk about a burst of flavor. And the best part about it is that it’s healthy! I’m hoping to come up with more creative ways of eating a healthier breakfast.
